Rachael Ray 30-Minute Meals Recipe – Potato Gnocchi
Ingredients:
* 4 potatoes – peeled and sliced
* 1 tablespoon Evoo
* 1 large onion, chopped
* 1 large, peeled, grated carrots
* 4 slices bacon, chopped
* 5 sprigs thyme
* 1 bay leaf
* 1 teaspoon zest of orange juice + 1 / 8 teaspoon cinnamon
* 1 cup sour cream
* The syrup maple or honey
* Pepper
Method:
* Take a large pot and add apples soft soil, with plenty of water. Boil. Season with salt water. Cook until tender.
* Take Evoo medium saucepan and heat.
* Add bacon. Cook over medium heat until crisp. Stir often.
* Transfer to a plate lined with paper towels. Keep only 2 tablespoons bacon grease.
* Add carrots, seasoning onion, chipotle pepper, bay leaf and thyme sprigs. Cook for 5-7 minutes.
* Add the orange zest, juice, cinnamon, chicken broth.
* Drizzle with honey.
* Season with pepper and salt.
* Simmer until potatoes are tender.
* Add broth mixture to sweet potato. Puree.
* Serve the soup with bacon on top and sour cream.
