Baked Cavatelli with Italian sausage and eggplant
Ingredients needed:
1 pound Italian sausage bulk
1 large onion
2 cloves garlic, minced
1 / 2 tsp. crushed red pepper
2 med. eggplant, peeled and diced
2 (8 oz) cans tomato sauce
Water 1 / 2 cup
1 / 4 tsp. BLK. pepper
8 oz shells Cavatelli
1 tbsp. dried parsley
1 cup shredded mozzarella
Heat oven to 400 degrees.
- Grease a pan 2 quarts.
- Heat a large skillet over medium-high heat until that hot.
- Add the sausage and cook, stirring, breaking sausage into small pieces, until browned.
- Add onion, red pepper flakes and garlic and cook for an additional minute.
- Add eggplant, cook for another 5 minutes. Youra Stir ingredients occasionally.
- Stir in both cans of tomato sauce, in addition to its water and black. pepper, cook for an additional 10 minutes.
- While the sausage is cooking, prepare pasta.
- Drain the pasta and the sauce was launched when finsihed both.
- Place half the mixture into the pan, cover with half the parsley and cheese.
- Create a second layer with remaining pasta mixture, sprinkle with parsley and remaining cheese.
- Cover with foil. Bake 15 20 min. until hot.
Serve with green salad, a spicy Italian dressing and crispy Italian bread
